Need Some Jerky Recommendations - 07/16/19 05:01 AM

I’m on another kick. Looking to make some beef jerky (until I can get another game animal). Anyone able to recommend a recipe for ground or sliced meat marinades. Thoughts on dehydrators?

I use lean steak like flank or some other lean cut. I am a fan of Johnny Fleemans marinade. Good taste but not overly salty. If you want it hotter and some red or black pepper. If you like it sweeter and some brown sugar. I use a dehydrater I bought at Walmart.

I don't make jerky but I second the Johnny Fleemans. In my opinion it is way better than say Dales.

I make mine out of ground deer meat. I use the Nesco brand Original flavor seasoning. Each packet does a pound of meat. They offer several different flavors.

Jack Daniels, Dr. Pepper, Montreal Steak seasoning and red pepper is on of my favorites.

Picked up a dehydrator, jerky gun and some seasonings. Got 2 lbs marinating in the fridge. Gonna do some Mandarin Teriyaki and Hunter's Blend to see how it goes. I am also planning to do a few batches on some gentle smoke then finish on the dehydrator.

In the past we used ground venison and it was awesome. Stuck with grocery store beef until I get lucky enough to drop something this fall.

Man the teriyaki and hunter's blend were some count. Tomorrow I'll try the mesquite and pepper blend. Once I get a taste of those I'll move to giving them some smoke before going into the dehydrator. Promised the wife I'd do some fruit soon too.

I mix Dale's and Soy, then add whatever spices seem right at the time. Black Pepper, Red Pepper, Dehydrated Jalapenos, etc. Then add some water to tone down the sodium in the Dale's and Soy.

Last batch I only marinated about 12 hours. Probably needed at least 24 hours.

Heard Dale's needed a reduced time. I'll try it both ways. Love some Dale's and love some jerky. Preciate the feedback.

I've done a lot of homemade blends of seasoning but I can't get close to the Hi Mountain seasoning.

A 24 HR cure, then on the smoker makes the best jerky I've ever eaten.

Next step is to involve the smoker. Thanks for the feedback! Now I need to make enough to last.
