Cast iron griddle on the green egg, little bit of oil, couple minutes each side and the ones with skin still on em we just cooked skin side down until it looked done, I think we managed to not over cook any of it, it was really good

Can’t remember the name but I got it at Kroger and it was something like blackened redfish magic

This. And chef Paul invented the dish when he was executive chef at commander's palace.

Season fish liberally and place into a smoking hot cast iron skillet. If you don't set off your neighbors smoke alarm, the skillet wasn't hot enough. grin

This here is the ticket. I use the cast iron outside on the burner for the turkey fryer.
